Pancreatic Lipase: a Scheme of its Specificity and a Hypothesis of the Mechanism of its Action

Abstract

THE specificity of pancreatic lipase has not hitherto been readily defined. Lipase can hydrolyse many esters, but acts best on those derived from long-chain fatty acids1. Less attention has been paid to the effect on ester oly sis of that part of the ester derived from the alcohol; glyceryl and benzyl groups have been found to influence the reaction most favourably, while aliphatic groups exercise a restraint which increases with the length of their carbon chain2.
