Abstract
DURING some experiments on the non-enzymatic browning reaction between reducing sugars and nitrogenous compounds, it was found that a mixture of glucose and thiamine-hydrochloride showed considerable browning when heated in sealed glass tubes at 85° C. for some days. The experiment was repeated on a larger scale and the results seem worth publication.
