Abstract
IN previous studies1 it has been shown that Lactobacillus lactis O 37 grows much better in autoclaved milk than in milk heated only to 80–90° C. Apparently this is due to the formation in milk, during heating in the autoclave, of a stimulatory substance which results from the decomposition of lactose2.
