Phenethyl Alcohol in Wines

Abstract

PHENETHYL alcohol has been found in fusel oils in but a few cases1,2, and only in trace amounts. Probably for this reason it has been assumed that it is not formed in fermentation of natural substrates3–5. However, it is well known in the perfume industry that in steam distillation phenethyl alcohol is mainly left in the pot residue6. The low volatility of phenethyl alcohol thus explains its absence in fusel oil fractions.
