Abstract
Wissmann and Nitschmann1, studying the action of rennin on α-casein by the method of Sanger2, found, after the action of rennin for 30 min., not only the original N-terminal amino-acids arginine and lysine but also a new N-terminal amino-acid, namely, phonylalanine. Thus these workers concluded that the non-protein nitrogen which is formed by the transformation: α-casein → para-α-casein + non-protein nitrogen, results from the rupture of a peptide bond.
