Abstract
DIETARY use of raw kidney beans (Phaseolus vulgaris) is known to increase the incidence of liver necrosis in weanling rats1 and nutritional muscular dystrophy in chicks2. Although this effect has been attributed to some heat labile antagonist(s) to vitamin E, the nature of such antagonists and the mechanism of their action are unknown.
