Abstract
STRUCTURAL features of model complexes formed between phospholipids and proteins throw light on the molecular architecture of both biological membranes and serum lipoproteins. The polymorphic phases of both synthetic and natural phospholipid–water systems have been extensively studied1–6, but little work has been reported on phospholipid–protein–water systems7–10.
