TG2-mediated transamidation of wheat gliadin (to biotin) in the presence of selected ligands at 15 µM (reported in Table 1) shown as percentage of gliadin control. Data are presented as means ± SD (n = 3). The asterisk indicates a significant change (p < 0.05) from control. Only ascorbyl palmitate was able to reduce the transamidation to a major extent.
