Lineweaver–Burk plot for enzyme–substrate reaction (1/V vs 1/S) (a) Control (water), (b) Heptane, (c) Propylene glycol and (d) PEG 200. Reaction was conducted by varying the concentration of starch in the range of 10–100 mg/ml along with 1 ml of enzyme (having activity of 4.6 mmol/min/ml in water, 6.5 mmol/min/ml in heptane, 5.3 mmol/min/ml in propylene glycol and 6 mmol/min/ml in PEG 200) and 1 ml of the respective solvent incubating at 30℃ and at a pH of 6.9 for 10 min.
