Morphology of BSA-capsaicin nanoparticles. (a) Not dried (ND), (b) dried with water (DW), (c) dried with NaCl (DN), and (d) dried with sucrose (DS). Electron micrographs showed a synergy effect between loaded capsaicin and drying procedure. The isolated nanoparticles showed a change of shape, size and, in some cases, showed coalescence. TEM micrographs showed several magnifications (upper right margin) due to the increased NPs size.
