Partial least squares-discriminant analysis (PLS-DA) was used to rank metabolites according to their prognostic importance (VIP scores) in separating the metabolite profiles of beef and the plant-based meat alternative. The boxes on the right of the plot indicates the relative concentrations of the corresponding metabolite in the plant-based meat alternative and beef. Red means higher abundance of the corresponding metabolite, whereas blue means lower abundance. Metabolite classes were identified using Chemical Similarity Enrichment Analysis (ChemRICH) software procedures (http://chemrich.fiehnlab.ucdavis.edu/)11 and indicated by the colored bars left of the metabolites.
