In both plots, the red circle indicates the predicted values associated with the baseline menu and the green circle indicates the predicted values for the swapped menu. The pink triangle indicates the observed values under the baseline menu, and the blue triangle indicates those under the swapped menu. Mismatch between observed and predicted values can lead to observed values that lie beyond the edge of the predicted values. A plausible explanation is that participants were more likely to select healthier and more sustainable dishes in the online task.
