From: A formal analysis of Listeria monocytogenes cross-contamination dynamics in multi-species biofilms

Estimates of L. monocytogenes load in cold-smoked salmon during storage at 5 ºC. In this specific case study, contamination is modelled to occur within a 5 g portion of a single slice in each 80 g package. L. monocytogenes was transferred at 1st or 6th contact from both single- (L96) and multi-species (F96) biofilms. Estimates were obtained from the experimental results of this study.
