Evaluate the effect of GA concentration, solution pH, derivatives of GA and EDTA on the antimicrobial activity in the absence or presence of UV-A light. Logarithmic reduction of E. coli O157:H7 in the absence or presence of UV-A light and presence of (a) GA (0, 5, 10, 15 mM) and GA (15 mM) in phosphate buffer pH 7.4, (b) Pyrogallol (Py, 15 mM) or Propyl Gallate (PG, 10 mM), and (c) 15 mM GA + EDTA (E, 1 mM) with or without addition of 2 mM Mg2+ and 2 mM Ca2+ (MC). Mean ± SD. Means sharing the same letter are non-significant at P < 0.05 according to Tukey’s HSD test.
