Ensemble averaged MSD curves and van Hove distributions obtained for 1% (w/w) mucin with increasing concentrations of soluble dietary fibers at τ = 1 s. The addition of increasing concentrations of AX or βG (A and C) to 1% (w/w) mucin showed little effect on the ensemble averaged MSD with the corresponding van Hove function following a Gaussian distribution (B and D). In comparison, pectin (E) is shown to induce a gel-like transition with a decrease in the fitted power law scaling of τ 0.96, τ 0.78 and τ 0.44 at 0.2%, 0.4% and 0.6%, respectively. The corresponding van Hove function (F) shows that at 0.4% and 0.6%, the values appear to deviate from the Gaussian distribution. Dotted lines represent the Gaussian distributions fitted to the data.
