From: Unexpected Crossover in the kinetics of mutarotation in the supercooled region: the role of H-bonds
The various possible isomers of L-sorbose appearing during the mutarotation. The linear conformation is a transitional state with negligible lifetime and concentration at any time scale of the experiments. The color of balls is corresponding to suitable atoms: red: oxygen, light gray: carbon, dark gray: hydrogen.
