Summary
Coffee beans are complex biological matrices comprising carbohydrates, proteins, lipids, alkaloids and phenolic compounds. The two principal species, Arabica and Robusta, differ in caffeine content, lipid profile and chlorogenic acid composition, which in turn influence flavour and antioxidant properties. During roasting, the Maillard reaction and caramelisation generate hundreds of volatile organic compounds (VOCs) such as pyrazines, furans, aldehydes, ketones and phenols. These VOCs interact to produce characteristic aroma notes ranging from fruity and floral to nutty, caramel and smoky. Non-volatile constituents, including trigonelline, diterpenes and organic acids, contribute bitterness, acidity and body. Post-harvest processing (wet, dry or semi-dry methods), geographic origin, bean maturity and grinding size further modulate the extraction of these compounds. Brewing parameters—temperature, water chemistry, contact time and pressure—determine the solubility and balance of flavour precursors, ultimately shaping the sensory profile of the beverage. Understanding the interplay between chemical composition and flavour formation is vital for quality control, product innovation and meeting the diverse preferences of global consumers.
