The interplay between diet and the gut microbiota is central to understanding the initiation, perpetuation and potential remission of inflammatory bowel disease (IBD). Dietary components—including macronutrients, micronutrients, non-nutritive additives and bioactive compounds—shape microbial community structure and metabolic output, modulating mucosal barrier integrity, immune homeostasis and inflammatory tone. Diets rich in fermentable fibre foster expansion of short-chain fatty acid-producing bacteria, which strengthen epithelial tight junctions and regulate T-cell responses. By contrast, high levels of dietary fat and simple sugars can induce microbial dysbiosis, reduce mucus-fortifying taxa and promote pro-inflammatory pathways. Emerging data also implicate common food additives, such as emulsifiers and carrageenan, in perturbing microbial ecology and enhancing gut permeability.
