Fat Replacement Strategies in Food Products
Summary
Fat replacement in food formulations has evolved as a vital approach to reconcile consumer demand for healthful, lower‐calorie products with the sensory and functional roles traditionally fulfilled by lipids. Strategies encompass carbohydrate‐based mimetics such as modified starches, maltodextrins and dietary fibres; protein‐based systems including microparticulated proteins, microgels and protein–polysaccharide complexes; and structured lipid alternatives like oleogels and emulsion gels. These agents are designed to emulate the lubricity, mouthfeel and bulk properties of fat, while reducing energy density. Advances in processing—thermal–mechanical treatments, enzymatic hydrolysis, anti‐solvent precipitation and high‐pressure homogenisation—enable the tailoring of particle size, microstructure and rheological behaviour. Recent work highlights the coupling of oral tribology with traditional rheometry to bridge instrumental measures and sensory perception, ensuring that low‐fat products retain creaminess, stability and flavour release. Applications span dairy (cheese, ice cream, yogurts), bakery goods, dressings and meat analogues, reflecting global efforts to combat obesity and cardiovascular disease without compromising palatability. Ongoing challenges include scale‐up of novel fat replacers, regulatory approval, consumer acceptance of unfamiliar ingredients and the optimisation of multifunctional systems that deliver nutrition, safety and cost‐effectiveness.
