Across diverse products—from frankfurters and sausages to pâtés and dry-fermented meats—these approaches deliver significant reductions in saturated fatty acids and improvements in fatty acid balance, while maintaining acceptable hardness, juiciness and oxidative stability. Ongoing challenges include optimisation of sensory acceptance, process scalability and shelf-life performance under commercial conditions. The integration of structured lipids thus represents a versatile platform for the development of healthier meat emulsions with global relevance for public health and industry sustainability.
