Summary

Mucilage denotes a class of high-molecular-weight polysaccharides produced by plants and characterised by exceptional water-binding and gel-forming capacities. Extracted primarily from seeds, leaves or tubers, plant mucilage can be isolated by methods ranging from simple aqueous extraction to advanced techniques such as enzyme-assisted, microwave- or ultrasound-assisted processes. Yield and purity are strongly influenced by parameters including pH, temperature, solvent composition and drying modality. Once isolated, mucilages exhibit non-Newtonian rheology, typically shear-thinning behaviour and viscoelasticity, making them versatile hydrocolloids for thickening, stabilising and gelling applications. Their biocompatibility, biodegradability and non-toxicity have fuelled interest in clean-label food formulations, edible coatings, fat replacers and controlled-release matrices. Emerging work has elucidated nanoscale network structures, informing the rational design of functional gels. By tailoring extraction conditions and downstream processing, researchers aim to optimise functional attributes—water- and oil-holding capacity, emulsifying and foaming activity—to meet specific technological and nutritional demands in a range of food systems.

Recent investigations have unveiled the nanoscale underpinnings of seed mucilage gelation. High-resolution imaging has shown that upon hydration, fine polysaccharide fibrils emanate from seed coats and self-assemble into an interconnected three-dimensional network. This process is modulated by solvent polarity, pH and the balance of hydrophilic versus hydrophobic interactions. Electron microscopy studies confirmed fibre diameters of 20–50 nm, while live microscopy captured fibre growth dynamics. Insights into this network formation have provided a molecular basis for the characteristic shear-thinning and elastic behaviour of mucilage gels, offering design principles for formulating texture-modifying food ingredients with predictable mechanical and release properties.
