Nutritional economics examines how economic variables—such as income, prices and preferences—influence household food choices and dietary quality. Central to this field is the analysis of demand responses to changes in purchasing power and relative costs of foods, framed by consumer theory and empirical estimation of elasticities. Households allocate limited budgets across food groups, balancing staples, nutrient‐dense items and convenience products according to taste, culture and available market options. Income growth often leads to improved dietary diversity and micronutrient intake, but the magnitude of these gains depends on price structures, market accessibility and non‐monetary barriers such as ingrained food preferences. Insights from this research inform policy instruments—cash transfers, vouchers, subsidies and infrastructure investments—aimed at closing gaps between actual consumption and recommended diets. Globally, understanding household food demand is vital for designing interventions that advance both food security and public health, particularly in low‐ and middle‐income economies undergoing rapid nutrition transitions.

Recent studies have applied extensive household panel data from several sub‐Saharan African countries to model consumer preferences and nutrient intake responses to economic shifts. Findings indicate that increases in total household expenditure yield larger proportional gains in dietary adequacy than equivalent reductions in food prices. In regions dominated by a single staple crop, price changes in that commodity strongly affect micronutrient consumption, whereas diversified food systems show more diffused price effects. These analyses emphasise the nonlinear relationship between income growth and nutrient intake and underscore the importance of broad‐based income interventions when aiming to elevate dietary quality among poor consumers.
