Summary

Chia seeds (Salvia hispanica L.) are a nutrient‐dense functional food characterised by high levels of dietary fibre (approximately 30 %), plant‐based protein (around 20 %), and lipids (30–35 %) dominated by the omega-3 polyunsaturated fatty acid α-linolenic acid. They also supply essential minerals (calcium, magnesium, iron, phosphorus, zinc), B-group vitamins and a spectrum of polyphenolic antioxidants such as caffeic and rosmarinic acids, quercetin and myricetin. The unique hydrophilic mucilage enables water retention and gel formation, improving satiety and glycaemic control. Consumption has been associated with improvements in serum lipid profiles, blood pressure regulation, reduction of inflammatory markers and enhanced gut health. Emerging evidence highlights potential roles in weight management, glucose homeostasis, cardiovascular protection, neuroprotection and adjunctive cancer prevention, alongside applications in fortified and functional food formulations worldwide.

PPARγ: Peroxisome proliferator-activated receptor gamma, a nuclear receptor that regulates adipocyte differentiation and lipid storage.

NF-κB: Nuclear factor kappa-light-chain-enhancer of activated B cells, a transcription factor central to the control of inflammatory gene expression.

Bioactive peptides: Short sequences of amino acids released during protein digestion or processing that exert specific physiological effects beyond basic nutrition.
