Recent work has used plasma lipid profiling to refine our understanding of dietary fat quality in relation to health outcomes. In a large cohort, higher circulating n-3 and n-6 polyunsaturated fatty acids were associated with substantially lower risk of hepatocellular carcinoma and chronic liver–disease mortality, whereas elevated saturated fatty acids predicted three- to six-fold increased risk. Complementary analyses in another population have shown that individuals in the highest quintiles of whole-grain and dietary-fibre intake experienced a 22–31 % reduction in liver-cancer incidence and a greater than 50 % decrease in chronic liver-disease deaths.
